Heat the oven to 350°F (175°C) with a rack in the middle.
Heat a large skillet over medium-high heat, add the ground beef and cook, breaking it into small crumbles with a spoon, until no pink remains and the pieces are browned, 7-10 minutes. If more than about 2 tablespoons of fat pools in the pan, spoon it off.
Stir in the condensed soup, salt and pepper until no streaks of soup remain, then taste and add more salt only if needed.
Spread the beef mixture in an even layer in a 2-quart baking dish, about 11 x 7 inches (28 x 18 cm).
Arrange the frozen tater tots over the beef in one snug layer, then sprinkle the Cheddar evenly over the top.
Bake uncovered for 35-45 minutes, until the tots are golden brown, the cheese is blistered and melted and the center of the beef layer reads at least 160°F (71°C). If the cheese browns before the tots do, tent the dish loosely with foil for the last 10 minutes.
Rest the dish for 5-10 minutes so the sauce thickens slightly, then spoon into 4 portions and serve hot.
Approximate values per serving.
